I would like to be able to change the area that says shop by category and specials on my home page in the middle.

Can anyone direct me on how and where to edit that, I would like change the specials to Featured Products and then also have text on the home page that I can edit myself

You can turn on and off those center modules through Admin >> Template Design. Those files are located in your catalog\templates\yourtemplate\mainpage_modules folder.

Change the one of the modules to mainpage.php in your Admin and then you can add text or whatever by editing your mainpage in Admin (under marketing I think or Catalog - can't remember).
