Can anyone please give me an explanation of Product Extra Fields as in how to and what for, beyond Kerry Watson's explanation, with reference to potentially using to to create a different shipping method?

I use the feature to inform customers of two things:

1) Where a product is shipping from (we have several warehouses)
2) Where it ships to (i.e. export restrictions).
